On iPad, you can use the familiar gestures to do that. I don’t have a Mac running it, but I would guess holding down some modifier key while dragging a selection handle would rotates shapes.

Press and hold the Command key while your pointer is over the item’s selection handle, then drag to rotate.
Tip: As you’re rotating an item, press and hold the Shift key to have the item snap in 45-degree increments.
